Chef Martin Simolka takes over the Scribe
Forever a passionate, Martin took a liking to cooking from his childhood… It was in Germany, his country of origin, that it all began.
Alongside Chef Thomas Neeser, in the legendary Adlon Kempinski hotel in Berlin, the passion for the 11th art is anchored.
2008, he arrived in Paris and it was in the heart of the most prestigious Parisian houses and with the greatest, that Martin learned, discovered and perfected his style.
From Pavillon Ledoyen to Shangri La, before a move to the mythical George V, it was alongside Chef Raoux at the Peninsula that he spent his best years as First SousChef.
Change of scenery for Martin who takes the reins of the Molitor hotel where his cuisine will be more raw and authentic
with a touch of modernity. By becoming the Chef of the Hotel Scribe today, Martin is setting himself a new challenge. “Cooking is about sharing, pleasure and discipline, both with customers and with my Brigade. Integrating Le Scribe is for me a real challenge that I am ready to take on”
